just wondering how many times u can change professions in the crystal desert

I believe as many times as you want. You'll have to worry about buying and questing, but you can change back to your original sub profession (and keep your previous skills) or another sub.

Yep, once you done the quest(s) you can switch your secondary whenever you desire.

Oh and to add on. Once you do a secondary changing quest:
1.) You don't have to change immediately
2.) You don't have to redo the quest when you want to change that sub again.

Also, it's an easy way to refund secondary prof attribute points, just swap then swap back.

Remember when you switch secondary, go back to Ascalon, Yak's, Sardelac, and Serenity Temple for the secondary quests to get skills without having to use up skill points/gold.
